Sweet and Sour Cabbage Soup-I love the flavors of sweet and savory combined. What women doesn’t like chocolate covered pretzels? This soup adds a hint of sour to the mixture. Perfect!
Ingredients-
Olive oil for sautéing
2 leeks sliced thin
2-3 large carrots-chopped
3-4 stalks of celery-chopped
1 small head of purple cabbage-shredded
1/2 cup Apple Cider vinegar
1/4 Agave or Honey (or a comparable amount of brown suger)
28 oz can of chopped tomatoes (San Marzano are the best!)
6 cups vegetable stock
Salt and pepper
DIRECTIONS: In a soup pot on medium heat, cook onions, carrots and celery in olive oil, until they are soft. Add cabbage, and cook until it just starts to wilt, about 3 to 4 minutes. Add in the rest of the ingredients and boil. Reduce heat to low and simmer for 1-11/2 hours. You may ned to add more vinegar or Agave to balance flavors. Add salt and pepper to taste.

Joker Salad-The name of this salad came from my husband Paul. He said the colors reminded him of the Joker costume worn by the Batman’s infamous arch-enemy. Only in my house!!
Ingredients-
!/2 Head of purple cabbage-shredded
1 Bunch Collard Greens-Julienned
2 Large Carrots-Shredded
Handful of SugarSnap Peas-Julienned
1 Red Pepper-Chopped
1-Green Squash-Chopped
2-3-Green Onions-Diced
2 Ears Fresh sweet raw Corn cut off the cob (It’s my secret favorite ingredient)
Handful of dried Cranberries or Raisins
Handful of chopped raw Pecans or Walnuts
Dressing-
4 Tbs-Olive Oil
2 Tbs-Sesame Oil
2 Tbs Apple Cider Vinegar
2 Tsp Braggs Liquid Aminos or Low Sodium Soy Sauce
2 Tbs-Tahini or Peanut Butter
2 Tsp Agave or Honey
1/2-3/4 Tsp Grated Giner
Salt and Pepper to taste
Put all dressing ingredients in tightly sealed container and shake hard, or just make in blender. Add to salad and work through.

My students have a very cool final project to do. They asked me for an example. There aren’t any, so I created one. I’m not going to explain the project, just that my inspiration is Patti Smith. Sadly, most of my students don’t know who she is…
